I really wanted to post a “taco tuesday’ post because I made the bombest homemade Mexican dinner not too long ago (which I will share this week), but today I decided to go with this simple ‘Overnight Oats’ with protein, being that I have been trying to change up my breakfast! I have always loved over night oats, so I decided to try something different and pair it with my vegan chocolate shakeo! IT WAS DELISH!! and such an easy breakfast that you can literally prepare 5 minutes the night before.
Here’s what you need:
– 1/2 cup rolled oats
– 1/2 banana
– 1 scoop chocolate shakeology (Buy here)
– 2 tsp shredded coconut
– 1 cup coconut or almond milk
– 1 chobani yogurt (optional)
– small amount of chocolate chips (optional)
I used this handy mason jar (came with a lid) that I had in my kitchen cabinet, mixed up all the ingredients and popped it in my fridge. the next morning, I just grabbed it and ate it as soon as I got to work. You don’t NEED to use yogurt, but it gives it more of a thicker consistency (which I like), but it also adds a lot more protein than what you already have so it really depends how much protein you are trying to eat for the day. I also just added a few dark chocolate chips for a little crunch. Unfortunately, I don’t like to eat first thing in the morning, even though you are supposed to. I need a few hours to wake up and sip on some water and coffee before I can actually eat anything solid. Because of this, my breakfast options during the week are super limited and always have to be something quick and easy.
